Abeille Boissons: Agua Fresca

The temperature is on the rise... Memorial Day unofficially marks the beginning of the summer season, and instead of only consuming plain water to quench your thirst, add some agua fresca to the mix. It's really easy to make. All you need is a blender, some fresh fruit, juice, water, mint, and ice.
I made this delicious concoction for Cinco de Mayo, and it was a hit with hubby. He is an agua fresca afficionado.

Makes 6 to 8 8-ounce glasses:

14 strawberries (hulled)
1/2 of a small seedless watermelon
1/2 can of pinapple juice concentrate (or use any bottled variety)
2 limes (juice 1, slice the other for garnish)
3 cups of water
2 or 3 sprigs of mint (leaves only)

Scoop out half of a can of pinapple juice concentrate into the blender. Add in 3 cups of water, all of the strawberries and the flesh of the watermelon. Squeeze in the lime juice, and add in the mint.  Blend until very smooth, and pour into your desired pitcher.

You want some texture in this drink, but no big chunks. When you finish blending it all up, the liquid will be very frothy. To combat this, just throw in a few ice cubes (Thanks for the tip, hubby!), which will cool the drink down and get rid of all the foam. Put the pitcher into the refrigerator for an hour or two, so that the flavors can get happy together. You could drink it straight away too... no harm done.

Refreshing, delicious.
