Abeille Cuisine: Eggplant Parmesan Turkey Meatloaf


Cooler temperatures call for food that warms the heart and satisfies the belly. Enter, meatloaf.

My mom used to make us meatloaf at least once a month when I was growing up, and I LOVED it. There's just something about this dish... It's not a steak, not a hamburger, but just as (if not more) savory and delicious.

However, for the last several years I have replaced ground beef with ground turkey. I find that it is very tasty, with the only drawback that it can end up overcooked / dry if you don't watch it closely. The recipe that I used called for ground beef, but I swapped in ground turkey.









Trust me, this is an outstanding meal (with an Italian twist), and SO EASY! Maybe that's why my mom made meatloaf so often... It's a simply a crowd-pleaser! Hubby and I loved it, and I'm sure that Bee will too, once she has molars. Did I mention that the leftovers make MEAN sandwiches?
